Is there a way to prepare this that is healthy? I don't know what to do now that I am trying to watch my calories and eat healthier. It is grass fed no antibiotic or chemical added beef, from my family's farm. I just don't know what to do with it.
I made this last week and it was pretty good, though I added more spices at the end. I increased the cooking time by 4 hours because the meat still seemed tough. paleomg.com/crockpot-ropa-vieja-cuban-style-rice/

If you like tacos/healthy version of a taco salad.... throw the beef in a crock pot w/a can of Mexican style stewed tomatoes (organic of course) or add in your own fresh tomatoes and chilies, 1/2 of an onion, some fresh garlic, chili's and pepper for about 4-6 hours. Shred and add to tacos, burritos, salad, etc.
