We had fajitas last week, so I had half of a red, green, and yellow bell pepper sitting around that needed to get used. I chopped it all up with a carrot and some green onion to throw into a quinoa salad. I would usually just add lime juice and evoo, but I didn't have a lime, so I just mixed it together and put it in he fridge telling myself that I would get a lime later.
I never got a lime and it was on the verge of needing to be thrown out. I scooped some of it into a muffin tin and added scrambled eggs to make egg muffins-they were delicious!
Last night, Jeff was going to throw the rest out since we weren't ever going to finish it. I threw it in a pan with some sesame oil, chopped onions, soy sauce, and an egg in a last ditch effort to use it. It was absolutely delicious! Just as good or better than any fried rice I have ever made.
How do you guys eat quinoa? I feel like I always fall back on making it into a cold salad and never really get adventurous with it. Please share your favorite recipes!!
