I'd probably like the recipe as modified into a crumble more than the pie. Like, cut some flour/sugar/brown sugar with cold butter and a little salt, pile it on top of the apples and bake it that way.
I'm with you. I'd probably add oats to my crumble. It gives it a little crunch.
