I'm on the hunt for curtains for my dining room and would love some advice/opinions on what style would be best.
I'd like to hang the curtains using rings but want to avoid a messy/uneven look between the folds and if I understand how curtains work (entirely possible that I don't though!) a pinch pleat would avoid this problem. On the other hand the dining room isn't terribly formal (farmhouse style table) so would a pinch pleat curtain hung with rings seem out of place? One other option that might work I think is to use drapery rings along with the rings on a plain-front curtain.

I have pinchpleat curtains. I use Ikea rings with it, because they come with little hooks that go over the drapery hooks, so you don't have to trust those clampy teeth things.
Choosing a less formal fabric can make a pinch pleat seem less formal- a textured canvas or linen would really work with a farmhouse table.
I like inverted and cartridge style pleats better than the traditional 3-5 finger pleats that I grew up with. You could also consider a gathering tape instead of pleating it you plan to make your own.
I agree with auntie the fabric and colors you pick will determine the look more than if there are pleats or not. A solid white linen for example adds a lot of "rustic" texture paired with ORB rings and pole would totally work with a farmhouse look.
There are lots of pinch pleat styles. Smith and Noble has a big range of options. They are kind of pricey but searching with these terms you can probably find some good alternatives or have them made by a seamstress (locally or on etsy).

Not technically pinch pleat but I think it gives you look you want while staying casual and using rings: Soft top drapery

I love pinch pleat. I have my guy do an inverted pinch pleat that look a little more modern.

If you look at my bio my sunroom drapes are inverted pinch pleat. They are also the same drapes that were in the LR and DR of my first house bio. Sorry, I'm on my phone and can't PIP.
