We decorated Easter eggs this evening, now I have a dozen hard boiled eggs I need to do something with in the next few days. I tried making egg salad once and it was just mediocre. Share with me your favorite recipe pretty please?
This is an egg/potato salad recipe, but one that's easily changed. It's not an exact recipe, because it's from a friend's grandmother who doesn't use a recipe. I'll see if I can approximate it.
This makes a huge bowl. It also has a high egg/potato ratio. The potatoes could easily be omitted if you want a straight egg salad.
One dozen eggs, hard-boiled, roughly chopped 10-12 fingerling or baby red potatoes, boiled and peeled, diced 2 stalks celery, diced 3/4 cup mayo (or more to suit your taste) 1/4 green relish 2 tablespoons finely chopped dill 1 teaspoon celery salt Liberal pinch of black pepper, more to taste 1/2 teaspoon sea salt 1/4 teaspoon paprika
I think that's it. The relish sounds weird, and this isn't a super traditional recipe, but it's yummy.
I make egg salad sandwiches a bunch. I like it simple. Use a fork to smash up the eggs, add mayonnaise to get it to the texture you like. The add a small squirt of yellow mustard, a little bit of pickle relish and salt and pepper. Eat on toasted bread. Yum. Now I want some!

i use an egg slicer contraption and slice the egg twice (once lengthwise and then turn it the other way and slice again) then add mayo to the texture i like, then salt and pepper.

This is how I do it too. H likes mustard in his egg salad.
I just made some last week: 6 hardboiled eggs diced with about 1/2 cup low fat sweet mayo (so miracle whip), 2 tablespoons of relish, and about 2 stalks of celery diced with just a little bit of salt and pepper. Next time I might add a little dill (maybe 1tsp).
