Tonight we're having meatloaf. Tomorrow DH is on his own bc I am meeting up with two MMers. Tuesday is TBD. Wednesday we go out with my ILs. Thursday is something quick bc DH has a fitting for a new seat at the bike store. Friday is TBD. I still have to go grocery shopping for the week.
Chicken Caesar pitas, sweet potato fries, and corn on the cob tonight.

It's a busy busy week here. Tonight- Salmon, broccoli and probably rice Monday - dinner with MMers Tuesday - spaghetti and meatballs Wednesday - I have an alumni assoc. meeting so MH is on his own and I'll grab something on my way there Thursday - grilled flank steak, probably a beer marinade and chili rub over salad Friday - some sort of takeout
It's gorgeous out today, so we grilled (well, DH grilled) sausage sandwiches with onions and peppers.
The rest of the week, I have a few ideas but nothing concrete. I barely cooked last week because of being sick, so I'm looking forward to getting back to it.
- We brought back some pasta from Eataly in NY, and I want to do a greens and pasta sort of thing with olive oil, garlic, and maybe crushed red pepper.
- We have two buns left over from sausage sandwiches, so something that goes on a bun. Fish or chicken sandwiches maybe. If we don't end up having sandwiches, I'll use them for garlic bread on pasta day.
- Something from the Jerusalem cookbook. Everything in this book sounds so good, I can't decide what to try first. Maybe hummus with ground lamb and pine nuts, and a fattoush salad, all served with pita. Maybe this will motivate me to make fresh pita. We'll see.
dh is still working in the yard, but I think we're going to grill some salmon too. We have green beans and couscous to go with it, plus the breadsticks he made today
I took a chicken breast, did a flour and egg coat, stuffed it with monterey jack shredded cheese, coated it with panko bread crumbs, and now it's baking in the oven. I'm doing a garlic quinoa and brown rice side dish with it.
We have a leftover rotisserie chicken, pea soup, and I froze the rest of the Easter ham.
Idk what else ... my budget is tight this week. I don't get paid until the 15th and I'll be leaving for a business trip that day so MH may have to figure something out. Maybe I'll make pizza dough and a quiche or something.
