Sun/Mon: black bean soup, cheese quesadillas on ww tortillas Tues/Wed: crockpot meatballs, brown rice, a veggie Thurs/Fri: baked ham and swiss sliders and probably just baby carrots and chips for sides Simple week.
Can I just eat at your house this week? lol. We are having chili for 2 nights and spaghetti for two nights. We leave for Savannah on Friday, so I plan to wine and dine both Fri. and Sat. nights.

Do you have the recipe for the lentil loaf? I'm always looking for more meat-free entrees.
Yes, besides DH we are vegetarian (and he eats vegetarian 98% of the time).
Here is the recipe:
3 cupsVegetable Broth
2 cupsRed/orange Lentils
1 cupBrown Rice
1 TablespoonOlive Oil
1 wholeOnion, Chopped
3 clovesGarlic, Minced
3 wholeCarrots, Grated
1 teaspoonKosher Salt
1 TablespoonDried Oregano
1 TablespoonGround Cumin
1 TablespoonGround Mustard
2 teaspoonsGround Coriander
2 teaspoonsDried Red Pepper Flakes (optional)
2 teaspoonsGround Black Pepper
2 wholeEggs, Lightly Beaten
1 cupGrated Sharp Cheddar Cheese
½ cupsRolled Oats
½ cupsBread Crumbs
2 teaspoonsSoy Sauce
½ cupsKetchup
½ cupsBBQ Sauce
Bring vegetable stock to a boil. Add dried lentils and reduce to a simmer; cook until all liquid is absorbed, about 10-15 minutes. Cook brown rice according to package instructions.
Heat olive oil in a skillet over medium/medium high heat and add the onions, garlic, carrots, and salt. Saute until they become tender. Add all the spices and cook for a minute or two more. Mix all remaining ingredients (except for the ketchup and BBQ sauce) with the sauteed vegetables.
Divide mixture between two oiled loaf pans. Mix ketchup and BBQ sauce and spoon over loaves. Cover with foil and bake for 45 minutes; uncover and bake for an additional 15 minutes. Let cool for 5 minutes before serving.

We're also going more vegetarian. I only make meat on the weekends. I would recommend Martha Stewart's new cookbook, Meatless. It has great recipes, everything I've made has been awesome

We have no plan and that means the week will be ugly...Between the party and DH's grandma passing there wasn't time. We are having party leftovers tonight and then maybe we will make a big thing of spaghetti to get by for a few days.
We have something like 15 lbs of (cooked) pork in the fridge bc DH thought it would be a good idea to roast a Costco vac pack of pork loin plus make pulled pork on the same weekend. I'm putting some of the pulled pork in the freezer, but still, porkporkporkporkpork. So:
I slightly exaggerated...I just weighed it and put 4 lbs of pulled pork into the freezer for later. We have 8 lbs left, mostly pork loin to eat this week...but I've been eating nothing but pork-based meals since Friday when the roast was cooked. I may grow a curly tail by the end of this week...Oink oink!

H can have a sandwich. Thursday: Kung Pow Chicken (aka trader joe's) Friday: H is taking me out for mexican, because......that's right. I'll be a doctor. Saturday: Spaghetti

DH thought he was helpful by going grocery shopping, except I forgot to cross off what I already bought when I went. So now we have double salad and tomatoes to use up before I leave for FLORIDA Sunday!
Mon: Pasta with pesto, tomatoes and broccoli. Salad. Tues: Pork loin in crock pot, sweet potatoes. Salad. Wed: BBQ pulled pork quesadilla and corn. Thurs: Breaded chicken, green beans, salad. Fri: Probably pizza Sat: DDs 1st bday party leftovers/full from party.
Sunday:ribs, Asian coleslaw, balsamic veggies Monday: wings and potato skins for the game! Tuesday, Wednesday, Thursday: easy stuff. Probably stir fry, jambalaya, and quesadillas Friday- take out Saturday: cook out for Blake's baptism! Smoked chicken, spinach penne salad, quinoa salad, and cake
