charlielove it's so delicious! I didn't have enough quinoa so I mixed some brown rice in also since they have similar liquid requirements and cooking times. So good! Thanks for the recipe!

1 1/2 cups dry quinoa 3 cups chicken or vegetable broth 1 red bell pepper, chopped 3 green onions, chopped 1 tsp minced garlic 5 oz chopped frozen spinach, defrosted and all liquid squeezed out (about half a box!) 1 tbsp canola oil 1 cup milk 2 cups grated cheddar cheese 1 cup Panko breadcrumbs 1/2 cups grated mozzerella cheese 1 tsp salt 1/2 tsp dry mustard 1/2 tsp black pepper
Directions:
Preheat oven to 375.
In a large saucepot over medium high heat, add the oil. Once hot, add the chopped bell pepper, scallions and spinach and sauté for about four minutes---just until bell pepper has started to soften. Add the garlic and continue sautéing for another 30 seconds.
Add quinoa to the pot, followed by the chicken or vegetable broth, salt, dry mustard and pepper. Bring to a boil then reduce heat and simmer for 15-20 minutes until all liquid has been absorbed. Stir well.
Now, add the grated cheddar cheese and milk. Stir to combine then pour into a greased 9 x 13" casserole dish. In a small bowl, combine the Panko and the mozzarella cheese. Sprinkle on top of casserole and bake for about 30 minutes until golden.

It was such a hit half of it is gone. H didn't get home until close to 10 and was so hungry he had a huge piece. And a friend stopped by to pick something up a d saw it right after it came out of the oven a d said "ooooh what's that? And grabbed a plate and a fork" (she's my BFF and has stayed here many times. It's not weird for her to just grab cutlery and dig into my dinner)
Do you think I would be able to make up all the parts ahead of time (ending after the quinoa is cooked in the broth) and put it in the fridge over night and then put it all together the next day and bake?
