I think it would be ok, but I tend to be willy nilly with my vanilla. I don't even usually measure it, just eyeball it. I would say you probably wouldn't miss it, although it may taste slightly better if it were included.
The vanilla is what will give it flavor. Otherwise, it's just going to be sweet. I agree that adding another extract (almond maybe?), some amaretto, rum, coffee or chocolate liqueur, etc. would be a great idea. Just a smidge to amp up the flavor. If you have none of those, I would add a bit of extra cinnamon and some nutmeg.
