I'm making whipped cream to frost and fill Lincoln's cake. How long is it okay at room temp? His party starts at noon.. I wasn't sure if it had the same "rules" as regular sugar based frostings.
Yes, it need to stay chilled. you can add gelatin to the whipped cream to help stabilize it if you're doing the frosting in advance or if it's going to be outside and a warm day.

This. Even with the gelatin, you'd want to keep it chilled as long as possible.

My only cause for concern with gelatin is that you can get little chunks if not careful. a little Mascarpone or creme fraiche added to the whipping cream will help keep it stiff as well. Oh and have everything as cold as possible. It will whip better.

I don't have any gelatin or mascarpone. Oh we'll, it's for Lincoln's smash cake so I'm not too worried. Everyone else is getting red velvet and white cupcakes with cream cheese and buttercream frosting. Thanks again everyone!
