I really like doing a salad of grape tomatoes (halved), black beans, corn, red onion, and zucchini (seeded and finely diced), dressed with a lime vinaigrette and a little chili powder for spice. It's super easy to make, it's light, and it can be eaten as a salad or on the tacos.
Google for Rick Bayless' toasted pumpkin seed guacamole. It has a nutty flavor that makes it different from ordinary guacamole.
You could make homemade flour tortillas (Homesick Texan recipe is great). They take a little time but aren't hard, and they reheat fine if you make them the day before.
Oh thanks for starting this thread. I'm planning a baby shower, and I'm having tacos catered. I need to figure out the details, but we will have chicken and beef tacos, and I need to figure out the sides. It's at 3pm, so I wanna say "fuck it" and just serve tacos lol
I love quick pickled red onions on shredded beef tacos. It's just red onions + enough vinegar to cover. It's best done the day before (or 2 days before).
I also like shredded, raw cabbage on that kind of taco. It gives it crunch!
Sweet potato & chorizo sounds like a good idea too if you're looking for another filling.
I'm a big fan of rice and beans with a taco bar. And good way to kick that up is a Chipotle copycat for the rice. I half expected to see crack-cocaine in the recipe it is so good:
For the beans, I just follow a traditional recipe and hit it with an entire jar of Goya Sofrito sauce and a packet of Sazon Goya. Sorry! I'm a gringo. But its a crowd pleaser.
For a Cinco de Mayo party, I am bringing watermelon-jicama salad which is 3 cups diced watermelon with 3 cups diced jicama and 1 cup finely diced blanched red onion topped with a cilantro vinaigrette. Easy and different.

I pretty much do this, minus the zucchini. I add a finely diced jalapeno or serrano pepper and diced avocado as well. It's extra delicious with fresh corn when the season is right!
For tacos, I always throw some sliced veggies (bell peppers, zucchini, onion) on the grill and leave those out as a topping.
I can't remember if it's Annie's Eats or Elly Says Opa, but one of those blogs has a delicious recipe for a black bean, roasted tomato, and feta salad.
