I was just going to post this because I need some ideas!
Monday - spaghetti Tuesday - crock pot BBQ chicken with scalloped potatoes and broccoli That's all I've got.
ETA: Wednesday - Chickpea curry over basmati rice Thursday - salsa chicken in the crockpot served over nachos Friday - pizza (zucchini, sundried tomatoes and spinach)
This looks like it will be the last week of crazy work before my semester ends so I'll be able to get back to cooking more and baking on the weekends. I always forget how much being in the kitchen relaxes me until I can't be there!
Monday: Grilled Cheese, Baked Beans, Applesauce Tuesday: Balsamic Honey Pulled Chicken Sliders, homemade coleslaw Wednesday: Turkey, Fontina, and Cranberry Panini, Sweet Potato Fries Thursday: homemade potato pierogi, salad Friday: Spicy Chicken and Pepper Jack Pizza, salad Saturday: out

Monday: Enchilada Stuffed Mushrooms (I am way too excited for this!) Tuesday: Chicken in Garlic Wine sauce Wednesday: Bruschetta Chicken with Marinated Eggplant on SmittenKitchen Thursday: Stuffed Peppers Friday: Ratatouille Saturday: Creamy Zucchini Boats with baked fish Sunday: Left overs
I always plan out my week but have extra stuff at the end. Chicken with garlic wine sauce is a carry over from last week. The mushrooms got bumped up since I have a huge box of mushrooms I never used last week and I hope they aren't bad already!

I studied all week for this post. I'm going to get better at this! Sunday: Lasagna Roll Ups. (I made 3 batches and was able to freeze 4 more dinners worth!) Monday: Hamburgers, fries & veggie. Tuesday: Pulled pork sandwiches, sweet potato fries & veggie Wednesday: I'm going to try to make the charlielove casserole. I can't add the peppers because they would kill me, but I'll do the rest of it. Thursday: Leftovers from any time during the week. Friday: Homemade pizza with homemade dough, because I'm finally going to drag my breadmaker back out of its cubbie! Saturday: Fish on rice with a veggie.
I'm feeling meal planning pressure, must keep my marrying kind status with good menus.
Ricotta gnocchi, roasted garlic broccoli Falafel w/ pita, Mediterranean couscous salad Greek feta and olive pasta bake, green beans Spinach, black bean and guacamole tostadas, salad

Do you make your own falafel balls or do you buy them packaged? If you make them, can I have the recipe? Or if you buy, what brand. Jamie (and H and I) love falafel but only get it take out. I'd love to make them at home

Monday- Cheese Ravioli, Meatballs, Garlic bread Tuesday- Macaroni and cheese in baked ham cups Wednesday- BBQ Turkey tips, Spinach/Feta twice baked potatoes Thursday- Turkey burgers, sweet potato fries Friday- Steak Pinwheels (I'll probably roll them with spinach and some sort of cheese) muffin tin au gratin potatoes, asparagus Saturday- OUT!!
Monday - whole roasted chicken with sweet potatoes - I'm going to make some bone broth from the leftover carcass Tuesday - sirloin tacos and black beans Wednesday - scallop pasta and sauteed rainbow chard Thursday - out to dinner with a friend - probably a steak house Friday - either short ribs or pork chops and mashed potatoes Saturday - smoothies and ricotta pancakes Sunday - maybe meatballs

Monday - Tuscan Garlic Sauce on spaghetti squash with garlic toast. The boys aren't crazy about the squash so they'll have whole wheat pasta. Tuesday - Chicken Tacos Wednesday - Slow cooker chicken tortilla soup
That's as far as I've gotten. We've got baseball the rest of week and I think a tournament this weekend, so I have yet to plan that out.
We went shopping on Saturday instead of Sunday this weekend so my menu is a day off of our usual.

For the "mac n' chreeze", ground beef and zucchini. Do you just make a box of mac n chreeze and add ground beef and zucchini? X loves ground meat and zucchini so I think he would love this.

Yep :-). We brown the beef and zuchinni w/ minced garlic and paprika and then mix in the mac'n'chreeze. We use this brand and prefer the cheddar style shells. H loves it so we often have it once a week. www.edwardandsons.com/reo_info.itml

These are the ones I usually make though, and I like that they are baked.
1 (15-ounce) can chickpeas, preferably low-sodium, drained and rinsed 1/4 cup minced onion 2 cloves garlic, minced 2 teaspoons ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon salt 1/4 cup cilantro leaves 1/4 cup parsley leaves 2 tablespoons olive oil
Preheat oven to 425 degrees F. Combine all falafel ingredients except 1 tablespoon olive oil in the bowl of a food processor. Process for 10 seconds. Stop motor and scrape down sides of bowl, then pulse for another 10 seconds, until all ingredients are well incorporated but mixture is still slightly coarse and grainy. Form mixture into 16 falafel balls and brush with remaining tablespoon olive oil. Bake on a cookie sheet for 20 minutes, flip falafel balls and bake an additional 20 minutes, until falafel balls are crisp and browned.
