Honestly, I think the university you have mentioned in the past is very proud of its work-life balance and this would not be seen as a negative. But I can see why you would be hesitant to say it that way in case s/he takes it the wrong way.
You could say you have heard great things about the university and its work environment, and are feeling unappreciated at your current job. You work hard and would prefer to work somewhere where that is acknowledged.
Basically I am trying to say compliment the university, its mission, its attitude, etc. And add in how those values will motivate you to do your best work.

Oh, I just mentioned job advancement for a reason on MM. The whole company is based in NY thing, but you don't want to move and there's no advancement in Boston.
I would also stress you're looking for more stability. Not necessarily work/life balance, but the University job is definitely more stable. Your H is still in school, right? So if you're the primary earner job stability is key and a good reason to make a switch.

I wouldn't say anything negative about your current job. You can talk about how you've heard great things about the university's environment, and that you feel it's time to move on to a new challenge after (however many) years with the same company, that you're excited about the opportunities for advancement this position holds, and how working for higher ed is appealing because it's such a stimulating environment, etc. etc.
Yay, aside from the pay cut, that is great news!! Better quality of life is definitely worth it!

lol I'm totally going to do that later (MM would be proud!). My BFF works at the university so I had him forward me the benefits package information.
Congrats! And I agree with all of this. Especially the $/hr comparison, considering the hours you work now and what you would be working in the new position. Quality of life is worth $$$$$ to me.
