I make egg bakes all the time - just layer hash browns, cheese, veggies, bacon/sausage in a baking dish and pour scrambled eggs/milk over the top. Bake at 350 for about an hour. You can make it all beforehand but it works best to get it to room temp before baking so I usually take it out of the fridge about an our or two before I throw it in the oven. For big events I make one loaded with veggies and one that's more kid friendly.
1 loaf challah, 8 eggs, 2 cups milk, the seasonings you want (I add vanilla and grand marnier in the spring or summer, sorgum molasses and spices in the fall or winter). Butter the inside of an 8x8 pan. Cube bread and dump in pan. Whisk eggs, milk and flavoring and pour over the bread. push down with a spoon so all the bread gets soaked. Cover with foil. Bake at 350. Remove foil after 30 minutes and continue the baking uncovered until puffy, golden and baked through. 45 min to an hour.
(Cream or half and half makes it too gummy and leaden for my taste. Milk puffs up fluffy).
For large groups I make two of these in 9 x 13 pans with thrice the ingredients. It bakes for over an hour and serves about 20-24.

Stuffed french toast
You will need 1 loaf of bread, 2 8oz packages of cream cheese, 1/3 cup of maple syrup, 12 eggs, 2 cups milk, 1/2 cup brown sugar, 1/2 cup of chopped pecans.
Break up a 1/2 loaf of bread into pieces, and put into a buttered cake pan. Soften the cream cheese and drop onto bread and lightly spread the cream cheese the best you can. Top with remaining bread in broken pieces. In a large mixing bowl, mix 12 eggs, 2 cups of milk and 1/3 cup of syrup. Pour the mixture over bread mixture and put in fridge overnight. Set out 30 min. before baking. Bake at 350 for 45 min. The last 15 min of baking sprinkle on brown sugar and pecans mixed together. Cut into squares when serving. Serve with maple syrup on the side if you want.

I really like serving eggs for breakfast. I figured out how to do it for a crowd when I did Breakfast Burritos. Really easy to prep and they freeze well, too.
I found this recipe to give you a guide. When I do mine, I scramble eggs, chop ham, shred cheese and warm tortillas. Then I evenly divide scrambled eggs onto the tortillas (2 egg per) and sprinkle chopped ham and cheese over. Then wrap corners and set with toothpick (if needed). Warm the next morning in a hot oven 350 - for about 10-15 minutes. Great frozen and thawed overnight, too.
Also good with scrambled egg, cheese and salsa. Really, any combination works - just know your crowd. The ham and cheese is a HUGE hit in our crowd.
