Oh, I think that reads like I didn't like it - not at all - I was just so exhausted by the time I sat down to eat my packet at like 10 pm that I don't have any memory of it

Oh that looks like a ton of work but kind of sounds awesome. I used to make an italian chicken one with sliced potatoes but, again, it was so much work. It'd have been faster if I had a little potato slicer.

It's no work at all. It's like 5 minute prep, max. Buy pre-sliced chicken tenderloins and frozen veggies and dump them in a packet. It takes longer for my oven to preheat than to do the recipe.
Not that you need it, but invest in a mandolin. They're a lifesafer in the kitchen. Mine's just the $10 one from WM and it does a really pretty good job!
