How do you cook them? I know there are several ladies on the board that eat sweet potatoes on the reg so I would love to hear your suggestions on how to quickly cook them.
I started a two week clean eating plan from CE magazine and a sweet potato was on my menu for lunch (along with a yummy salad). I scrubbed it clean, pierced it a few times with a knife, and put it in the microwave for 5 minutes on one side, then 5 minutes on the other side. It was edible, but not delicious. Any tips for how to cook these bad boys and make them yummy on the go? I do not have an oven accessible at work.
I pierce it several times with a fork and then throw it in the microwave. Then I put a little butter and lots of cinnamon on it. Or, I will roast cubed sweet potatoes with other veg (usually Brussels, onions, carrots) in olive oil & s&p. I do a big pan of roasted veg & grilled chicken or fish on the weekend and then eat it all week.
I zap them at work sometimes, but sweet potatoes can be tricky in the microwave because they are so varied in size and even quite variable thickness within a single potato. I prefer the sadlebred method. I will probably die of food poisining, but I like to cook it the night before, store it in the refrigerator, then let it sit on my desk all morning warming to room temperature before I eat it for lunch. I especially like to pour black beans, hummus, and bbq sauce on it, but that probably makes it not clean anymore.

Do you warm it up again at work? Or eat it at room temp? If you reheat it, does it get too rubbery?
At home I take it out of the skin and put the potato part in a microwavable container. I reheat it in the micro for 45-60 seconds. I don't have a problem with it getting rubbery.

I bake them in the oven (I like the texture better than the microwave), let cool, put in a glass container and refrigerate until I am ready to reheat in the microwave. I have made mine up to 3 days in advance and haven't had any issues.

This. I make on the weekend at home in the microwave, mash and throw in a container with my chicken for reheating at work. I eat them Mon, Tues, Thurs at work because those are my training days.
I wrap in plastic wrap when cooking them originally in the microwave at home.
You can bake them the night before and mash it. Then add some lemon juice to mashed sweet potatoes when you are going to eat them. They should reheat fine.
