I make strawberry rhubarb crisp. Cut up rhubarb and strawberries, but in baking dish with a touch of sugar. Top with a crumble of flour, brown sugar, oats, pecans and a bit of melted butter to make it stick. Bake at 350 for 30 mins or so (until it's bubbly around the edges). Top with vanilla ice cream if you have it.
If you like things on the tarter side you don't need strawberries. DH turns his nose up at Strawberry/Rhubarb concoctions, but LOVES straight rhubarb pie. I need the vanilla ice cream to go with it though. I found a good sale on rhubarb and I'm going to make a pie for Father's Day.
My grandmother cooks it forever with water, sugar, vanilla, and sometimes strawberry and serves it still warm over vanilla ice cream. It is seriously amazing. She doesn't have a recipe and I am too scared of messing it up to try it without one. She said the key is a lot of sugar and time because rhubarb is bitter on its own.
