I just realized that the chicken I bought and then defrosted this morning are chicken thighs with the skin and bone in them. I usually buy skinless and boneless thighs, so now I'm at a loss on what to make. Any suggestions?
This is the absolute best chicken thigh recipe. Really.
Lemon Cinnamon Chicken
10 Pieces Chicken (Legs and Quarters work best) 1/2 C Olive Oil 1/2 C Fresh-Squeezed Lemon Juice 2 tsp Salt 1 tsp Pepper 2-3 tsp Oregano 1 1/2 tsp Cinnamon
Put all ingredients except chicken into a large baking dish and mix well, making a marinade. Once mixed completely, begin adding the chicken one piece at a time, coating each piece completely in the marinade.
Bake, uncovered at 425 for approx 1 hr or until chicken is no longer pink in center. Several times during baking, baste the chicken with the marinade in the pan.
Ooo I used to have a good recipe for chicken thighs. I had to go back on TN to find an old post about it. Anyway, really easy and good. I would take the skin off, but this is actually better w/ bone-in thighs, IMO. I need to make it again.

Season chicken thighs on both sides with lemon pepper seasoning and salt, if not in the LP seasoning. I prefer skinless thighs with the bone still in.
Heat some olive oil in a skillet.
Mince a couple of cloves of garlic and slice up a few green onions. Add to olive oil. Allow to soften.
Add thighs and brown for a couple of minutes on each side, then pour in white wine to cover the bottom of the skillet about 1/8 to 1/4 inch. Deglaze pan. Reduce heat to low, cover, and simmer for 40 minutes.
While it's cooking, also cook some brown rice. Have a glass of the wine and chill.
At the last minute, steam your favorite veggie. I like the Bird's Eye steam in bag veggies.

Yum! I don't have green onions but i do have frozen chopped onion. Maybe I'll throw in a handful of those.
