I use this recipe. I make it the morning that I want to use it, then keep leftover dough in the fridge until I want to use the rest. It will keep a couple weeks, just let it set out for about 45 minutes prior to rolling it out for dinner.
Pizza dough, IME, is pretty bullet-proof. I usually do a basic dough sometime in the morning or around lunchtime so I can do a second rising. Sometimes things come up and I use it a day or so later- it starts to develop a more sour dough flavor. I sometimes freeze it as well.
