What a difference! I still vote for taking down that granite ledge (what is it called?! it has a name) all around the room. I guess you could keep it under the sink, but you can put tile there to do the same job and it'll look more continuous.
Hm, I know for sure that SS tile is a no for me. Just super trendy and I think you'd get tired of it very quickly. But I also feel like the white tile is going to look pretty plain with the white cabinets. Do you know how closely the white tile matches the white paint you picked for the cabinets? I'd go batty if they weren't nearly identical. I feel like I want a fourth option?
I love the #2 you posted, but I am afraid it is pretty trendy.
I would go with #2 if you plan to stay in the house long term, grey grout, and subway tile if not, grey grout.
#2 is like a nightmare from my childhood. It last saw light of day in the heady earthtone days of the 1970s. While was less often, but gold, avacado and flame orange were almost ubiquitous in kitchens that didn't have faux brick when I was growing up.
I'd probably do a plain white tile with mid-grey grout.

My in laws house is a time capsule from the late seventies, and it has that tile in orange. Oh, it's lovely. Short. But still, I love the shape, and think it looks good in white.
