We're hosting a party Friday and my sister's two friends are attending and are vegetarians. I'm making a pasta dish with no meat and a fruit salad, but need something else since its a very heavy meat menu. Suggestions? If I can make it before the party even better.
If they're lacto/ovo vegetarians, consider a roasted veggie fritatta. I think that a common mistake when cooking for vegetarians is omitting protein. Otherwise, grilled, marinated tofu is excellent. Even grilled mozarella is good and packs some protein.
