For enchiladas? I usually make a sauce to go with enchiladas rather than taco seasoning. I don't have mine on my computer at work, but it's pretty similar to this:
1 tbsp chili powder 1/4 tsp onion powder 1/4 tsp garlic powder 1/4 tsp cayenne (i like it hot!) 1/4 tsp oregano 1/4 tsp ground cumin salt and lots of black pepper
(this is the ratio that i generally stick to -- lots of chili powder and less of the others)
We don't really measure this stuff but this is about the ratio we use, too, and we use everything listed here (assuming we have it at the time, lol).
