What would make a 8 month old puppy that is totally house-broken, start being an peeing & pooping in the house, again. Nothing in her life has changed.

Stress or acting out would be why mine would do it. I'm not sure about others, though. I am guessing she gets taken out regularly so it's not a matter of holding it? Has she been playing with the new toys?

It could be, she might sense stress from the both of you which might affect her behavior.
Ours haven't had an accident since we had the home invasion last year. H came home and found wet spots in the main walkway and said they were both cowering in the corner of the kitchen under the dinette table when he came in, instead of greeting him at the door and bouncing around with joy like usual.
My mom has a dog that poops in the house out of spite, when he doesn't get enough attention. He's the most annoying one out of the 4 dogs they have, plus she has a bird, a cat, and a 5-year-old, and it doesn't help that he's the only one who acts out by shitting in the house during the night when they have a doggie door opened for him to go out freely.
My first guess would be stress from you guys. They can definitely sense it. Has her routine changed at all? (Specifically the times she goes out.) Is she also doing business outside, or is she just having accidents in the house? TMI--liquid or solid poo?
Could be stress with D not feeling well??? Yes I gave her the skunk, it is bigger than she is, but she carries it everywhere.
First, we need a pic of this, cuz it sounds adorable!
Second, I agree that it's probably stress from YH illness. She could wonder why he's getting so much attention all of a sudden and be a little jealous, so she's trying to get your attention and "air her greivences."

Is she crate trained?
After you rule out any and all medical conditions go back to potty training 101. Take her out every few hours. Give her a high value treat every time she potties. Do NOT punish her if you don't catch her going in the house, she won't know why you're yelling at her.
You can also get some toy treats, like a tug-a-jug to keep her busy. Or maybe see if a neighbor/friend/family member can help out with walking her and keeping her energy drained.
I know you're overwhelmed with other stuff, but she's not doing it out of spite. Dogs don't do anything out of spite. She might be bored, or sick, or lonely... but not spiteful.

solid poo, she is doing business outside as well, routine in the same.

Yes we crate trained her, since Wednesday every time she pooed outside I have given her a small treat.

You obviously haven't met my mom's hellious mutt then. There's no chance he's sick or lonely, and I don't think it's boredom since he does it at night. He's well taken care of even though he's a little asshole sometimes.

Apparently, at about 4 one morning, Duff decided he was being ignored. He walked into the basement, stared at D playing video games, lifted his leg, and peed on the bottom step. D said the damn dog never broke eye contact.
