it's sad. we just moved into our new home about a month ago and I still haven't done anything with the guest bedroom. it has a new queen mattress and bed frame in it, but the dresser and nightstand are ancient (they were my great-grandparents', lol). DH plans to sand and restain them (and attach the mirror to the dresser, but after refinishing), but those are the only plans we have for this room so far. the rest of the house is pretty well taken care of, just need little bits here and there.
my decorating scheme is "rustic glam" aka Pottery Barn. I can't afford PB though, so I choose things that are a mix of rustic and modern. my color scheme throughout my home is tan and chocolate brown, a dusky lavender (what you see in the pillows in the picture), sage greens, and ivory. mixed in throughout the home is oil rubbed bronze and mercury glass.
my mom is typically my go-to person for decorating help, but it's difficult when we live 2 hours apart and can't get together as often as we'd like for shopping.
we'd like to have this ready by the beginning of September. we live in the same city as my alma mater, and plan to host friends on home game weekends.
LOL! while Bear Bryant did coach at A&M, and he did coach our first Heisman winner, he is known for his time at Alabama. who we have have a HUGE game against the third week of the season, and will be THE game of the week. my friends would probably murder me if I posted a pic of the Bear.
I am a huge fan of his though. and I do like the idea--we'd be able to do that more quickly. my H likes the idea.
One of my favorite decorating tips is to find one of those picture calendars (the 12-month kind with the glossy photos) that has a theme I like. I have a guest-room that has a beachy theme, so I used a calendar with lighthouse photos. For the kitchen I used a calendar with pictures of fresh fruits and veggies. Your color scheme sounds like it would work really well with floral/nature scenes. Pick a few that you like (say, 6), cut them out (cropped to fit the size of the frame) and frame them. You can get inexpensive frames with mats already in them from places like Wal-Mart, Target, or Michaels. Frame the photos, and hang them on the wall in a series (all photos on one wall, either in a row, or in a rectangle, or whatever). It's instant art, and looks clean and interesting, and is generic enough for a guest room. And if you change your color scheme or theme down the road, it's easy to go out a buy a new calendar and change up the images.
I think some nice linens, interesting lamps, and small touches like pillows, towels folded and ready for your guests, and maybe some kind of chair (yard-sale chair re-covered, or even an old beat-up rocking chair from good will), and you're there :-) Blank rooms can be intimidating.
I think it depends on how you envision the room being used. If you think that it will be used only for college friends in town for football games, then I like the idea of using team colors and photos. But definitely not of Bear - we Bama fans claim him 100%.
If you think it would be used for other guests as well, then I like TH's suggestion of turning it into a pretty, classic room that all your guests can enjoy. And you could still add a couple of framed b/w photos relating to A&M.

I would do the gray and white with accents of maroon if that's the route you want to go with. I want to decorate our basement guest room (when we finish the basement lol) as similarly (gray and white with purple accents, pictures of the K-State campus, Bill Snyder, etc.) so that my H has a place to put all his K-State crap.
Coming back in and reading your post again... I'm wondering what condition the dresser and nightstand are in. From the photo, they look to be in good shape. Refinishing is a giant PITA. If they don't NEED it, I would leave them as is, maybe replace hardware if you want a facelift.
That dresser looks like one from YHL. They used some kind of cleaner to spiff it up and didn't refinish it. Maybe that would work. I think it looks fine in the photo, though maybe it doesn't look as nice in person or close up.
I like the subtle Aggie theme. Our entire basement is dedicated to our alma mater, so just one room doesn't seem too much to me!

They're in bad shape. Trust, they need refinishing.
I'm not a fan of gray and white for my own personal decor. I like it in others' houses.
I'll probably keep the blanket, change t he sheets to maroon, add a headboard and one Aggie wall item (that I already own) and some fake plants in a corner, for now. Then, when football season is over, I simply have to change sheets and wall decor.
