LOL We haven't boarded Roxie but the first time my parents dog-sat her for ONE night, I had pretty much an entire single-spaced page typed up for them. She is so neurotic, it was necessary!
We leave our cell numbers, local emergency contact, which dog gets which food and how much and how often (actually the food is already proportioned in baggies with the respective dog's name on it), and that's it.
Lol, I don't leave this much info with my mom/sitters for my kids! Though DD can talk obviously, and DS is your standard baby, no special instructions needed beyond how much/how often for bottles.

when you have a dog that needs daily medication and chronic health concerns, it gets a little more complicated.
Oh I understand. We are very fortunate that our dogs are pretty easy to take care of. If/when our dogs have chronic conditions, I will likely have long typed instructions as well.
I went through the effort of doing this while my parents dog sat a couple weeks ago.
...only to find out after that they never even bothered to read any of it. My mom just free fed, didn't crate, and gave him food that he was allergic to. Luckily, he's okay, just chunkier. Next time I may have to find someone else to watch the dog.
Yeah I left a similar note for a friend who watched Pel last weekend. I felt like an insane person. I also included contact info for his neurologist and the doggy ER, as well as emergency dosing instructions if he had a relapse while we were gone.

We dog and kid sit for friends. They left four pages front and back. I thought it was all info on the kid, nope -- she got about half a page and the rest was on the dogs.
I used to pet sit for a couple and their instructions were way more insane.
I had to feed the two dogs in two specific rooms on opposite sides of the house (or they would fight) and give one dog a pill with peanut butter BUT make sure to let the other dog lick the spoon.
i have a printed map & directions to the ER & the girls' vet.
i also write all the places where my kitty likes to sleep. my brother thought that was a bit too much, until it came in handy when he couldn't find her.
