Please humor me as fancy pouches didn't exist when my kids were babies.
I picked up a box of applesauce pouches a Target because I thought I could use them in DD's lunches when she starts preschool next month. She loves them. But then I wondered if they were a baby food and if this is the equivalent of putting Puffs in her lunch box.
My oldest is almost 6 and still eats applesauce pouches for snacks now and then. I think it's fine--it's just a more convenient means of packaging applesauce. I don't see the big difference between an applesauce pouch and a yogurt tube in terms of packaging.

My four year old still loves them. And one of the six year olds took them to school last year with no drama. They are quick to tell me when something is too baby-ish. They vetoed Teddy Grahams the first week of kindergarten!
As long as they eat them, who cares? It's fruit and veggie. If kids get mean about "baby food" use them at home in pancake mix, banana bread, etc. I don't make waffles without baby food, and my kid is five.

Um... I'm near 30 and have taken pouches as part of my lunch. My coworkers love it and love the idea. Not just for kids! lol it's basically fruit on the go! Who has time for a spoon?!
I have a coworker who is probably 50 and he loves the applesauce pouches. So umm, yeah I would say they're just a way to package the food that's less messy for kids.
