BBQ chicken nachos- grab an already cooked rotisserie chicken from your grocery store and shred it. Place tortilla chips on a baking sheet. Top with shredded chicken, scallions, bacon, shredded cheese, etc. Bake at 350 until melted. Drizzle a sweet BBQ sauce and sour cream and enjoy.

The other day I made pesto tortellini, and stir fried some zucchini, squash, red bell pepper, and spinach with garlic, oregano, salt and pepper, and mixed in some milk, butter and a little cream cheese to make a sauce. Put the tortellini on top. It was bomb
home made pizza with veggies- not that fast though
curry tuna sandwiches. A can of tuna, vegan mayo (or regular) and some curry powder to taste. Add in whatever you want in terms of raisin, apples, etc.
Trader Joes microwavable or quick meals like the bag of Japanese edamame rice or veggie spring rolls and veggie wontons.
Chopped cucumber, a can of black beans, and an chopped avocado. Mix together and add some lime juice if you want. YUM. So good. and hearty.
I make this for DH and he loves it. When it's just me, I replace the sausage with tofu. I'll eat it by itself, throw it over some rice, or throw it in a wrap.
1 meat lump 1 bag frozen veggies 1 bag sweet potato fries (i like the alexia ones. mmm)
If it's a veggie night- pasta and a jar of veg pasta sauce
Also pizza is quick veggie meal if I use purchased dough. Even if I make my own dough it's not a lot of extra work, just needs to be started the second I get in the door so it can rise.
Last night hubby had a frozen saag lamb meal and I had two bowls of cereal, so that was pretty "quick" lol
Fried rice. I usually by the fried rice seasoning in the asian aisle because it makes it taste pretty authentic. Then, you can add meats, veggies, and whatever to bulk it up. It also works great if you shred cauliflower instead of using rice.
Tortellini with veggies and a random sauce, sometimes those Philadelphia Cream cheese sauce canister.
Rotesserie chicken into enchiladas, quesadillas, or any number of things.

I made a spur of the moment ratatouille last night that turned out pretty good. I had some zucchini that needed eaten, threw in a can of tomatoes, some minced garlic and ground beef. And of course, topped it all with cheese. Micah loved the crap out of that meal.

Turkey burgers with frozen turkey patties and microwaved sweet potato, whatever frozen green veggie I have.
Lettuce wrap BLTs - separate iceberg leaves, cook/microwave turkey bacon and roll it up with tomato and light mayo or hummus.
Pasta with whatever veggies I need to get rid of, garlic, white wine, seasoning and Romano cheese. Sometimes will throw in leftover ground turkey or chicken.
Those are my big 3 when I'm not up to really cooking.
Oh and cooked quinoa with some steamed veggies with crumbled feta.

I make sauces and freeze them (pesto and spaghetti sauce) so that makes for a quick pasta dish. I also make pizza with store bought crust for a quick meal.
