It's always a good time to talk about pumpkins. I make a really good stew that's baked in a pumpkin. It's easy but it looks really fancy, and when you scoop it into bowls you scoop some of the pumpkin up with the stew. Yummmmmmm.

I do this, too! I make a French Pumpkin soup in small pumpkins every Halloween. So good.
I love Fall, but I'm happy with summer right now. Summer means tomatoes.

Et voila. It's hard to transfer the pumpkin once it's cooked, so if you have an oven-safe serving plate to cook it on, that's ideal. Otherwise I've had luck cooking it on parchment paper, then transferring it paper and all to a serving plate.
Spicy Fall Stew Baked in a Pumpkin
Ingredient List
• ½ medium onion, diced (½ cup) • 2 Tbs. olive oil, divided • 1 red bell pepper, cut into 1-inch dice • 2 cloves garlic, minced (2 tsp.) • 1 tsp. chili powder, preferably New Mexican • 1 tsp. ground cumin • ½ tsp. dried oregano • ½ lb. tomatillos, husked and quartered (1½ cups) • 1 15-oz. can hominy, rinsed and drained • 1 15-oz can pinto beans, rinsed and drained • ¾ tsp. salt • 1 5 to 6-lb. pumpkin, either sugar pie, cheese, red kuri, kabocha, or buttercup squash
Directions
1. Preheat oven to 350°F.
2. Heat 1 Tbs. oil in pot over medium heat. Add onion, bell pepper, and garlic. Sauté 7 minutes, or until softened.
3. Stir in chili powder, cumin, and oregano, and cook 3 minutes more, or until spices darken.
4. Add tomatillos, hominy, pinto beans, 1 cup water, and salt. Cover, and bring to a boil. Reduce heat to medium-low, and simmer, partially covered, 10 to 12 minutes, or until tomatillos are softened. Uncover, and cook 5 minutes more to thicken stew, if necessary.
5. Meanwhile, cut top of pumpkin around stem to make lid. Make sure opening is big enough for a serving spoon. Scoop out pumpkin seeds and strings. Rub inside of pumpkin with remaining 1 Tbs. oil, and sprinkle generously with salt.
6. Fill pumpkin with stew, then top with pumpkin lid. Bake it on the platter you plan to serve it on, because it will be hard to transfer! Place on parchment-covered baking sheet and bake about 1½ hours or until pumpkin flesh is fork-tender. Remove from oven; let stand 5 minutes.
7. Scoop stew, including pumpkin, into bowls and serve hot.

I love all things fall and pumpkin...except for the fact it is followed by a long ass winter. Pumpkin beer is the best seasonal variety and Sam Adams Oktoberfest is the best Sam variety.
I will drink enough to make up for all the pregnants around her that can't partake.

I do not like pumpkin pie but I love pumpkin pancakes and other pumpkin type things. I like I think squash more, butternut or acorn. Yummmm. I'm roasting a spaghetti squash right now.
But I do love fall. I love the smells, the crisp air and the color of the leaves as they fall to the ground. Nothing like fall in New England. It is glorious.
