My best friend lives in London, and I'd like to visit her some time in the next year. I'm super flexible about the week and time of year, but would definitely want to go over a weekend and would want to take a redeye there (leave Wednesday night and come back on Monday, or along those lines). Non-stop only. Out of JFK or EWR, on any airline.
Is there some type of flight search website that could send me weekly updates or alert me when the price dips to a certain level so I can jump if there's a great deal? I can't figure out how to do this without some specific date/month, and I don't want to sign up for every airline's emails just in case a sale comes up.
US to Europe is usually cheap in late January and February. Look about 6-12 weeks out. NYC-LON sounds like a popular business route, and US businesspeople don't fly over Thanksgiving, so check those dates as well. Slow Europe season starts in October and goes to the end of April. It helps if you know what the price is now versus what you want to pay, so you know when to pull the trigger on buying something. Know the policies for each airline. AA offers free 24-hr hold on a ticket while many European airlines give you free cancellation within 24 hours. This will help you lock in a price if it takes you a while to coordinate with said friend. I see prices now are between 700-800, getting down to $683 on Air India for the end of February.
I like to check the Flyertalk Mileage Run board. If there's a good deal, it will show there, but then they can disappear within a day.

As others have mentioned, if you set up a price alert in Kayak it gives you the option to choose Anytime, weekends or a specific month and put in a max price you're willing to pay.

Virgin Atlantic has a section on their site that is specifically for London travel deals. Current pricing for New York (JFK & Newark) Fares are each way based on round trip ticket purchase and are available through Aug 04, 2013, fares include taxes, fees, charges and carrier imposed surcharges.

If you don't have a US connection, you can actually find great international rates around Thanksgiving. Of course, then you have to deal with the insanity of the airports. But I definitely found normal-to-cheap rates from Buenos Aires to Houston flying the Wednesday right before Thanksgiving. I didn't take it, because I thought it would be stupid to send me to Houson on a business trip when the office would be closed.
And I think it had more to do with being a Wednesday than being a holiday. International business travelers typically don't fly on Wednesdays, because a lot of meetings, conferences, and classes are scheduled around a calendar week. I started flying Wednesdays when I could because they were so much cheaper and I was almost guaranteed a status upgrade because there weren't as many frequent travelers competing for them.
