For hotels You have good choices downtown or near Vandy.
Union Station is historic and usually has good rates. Hermitage is classic/old/fancy.
Loews is where a lot of stars seem to stay. The Hutton is nice too.
As for food. I LOVE Etch. It is downtown very good so you won't need a car. Husk just open and is getting good reviews but very hard to get a reservation. I like Lockland Table a lot too but I think you'll need a car or cab to get there. Public transport sucks.

We were in Nashville in May. Stayed at the Union Station Hotel which was lovely. We did rent a car but the hotel was close enough to Broadway that you didn't need one. But you would be missing out on some awesome food if you stuck to the main area.
Food: Catbird Seat (terrific molecular tasting menu) Lockeland Table (great) Silo (great) Arnold's (the "meat and three" concept was new to us, but this place was terrific) Loveless Cafe (incredible but you need a car for this) Jeni's Splendid (I love ice cream so had been wanting to try this place for years and it didn't disappoint) Pancake Pantry (glad we tried it but I would skip again and don't think this is a "must visit") Las Paletas (on all the food shows on TV but I didn't really get the hype. We have some good popsicle places in NY and this tasted the same as those)
Music: -Five Spot (near Lockeland Table): superlocal bar. recommended by young locals. 4 different local bands, really fun and intimate (the drummer in one of the bands started hitting on me while MH was in the bathroom so that was pretty hysterical. later MH teased me that I could only do as good as the drummer not the lead singer made even funnier by the fact that my very serious boyfriend before him was a singer/guitarist in a band. anyhow...) -Layla's Bluegrass Inn (on the main drag but not as crowded as the other bars. This was the music highlight of our trip. If you can see Tom Buller and Just Plain Trouble you should try to. One of the best live bands I've ever seen) -Robert's Western World (better than the really touristy bars on the main drag like Tootsies but not as great as the other two)
Sights: We did Ryman, Country Music Hall of Fame and Studio B tour (we aren't country music fans at all but the history was interesting and we love old school bluegrass/blues), Lane Motor Museum (MH is a huge European car buff given that he grew up in Europe), and drove to Franklin for a day.
Whiskey Kitchen was so good. I highly recommend the Hot Chicken. The resturuant is nothing fancy but had wonderful plates of fried goodness.
I always stay at the Aloft since I travel for work and it's in walking distance to the office. It's a nice hotel and has a great bar. I always have a great time just hanging out there after work.
