Typically I recommend Monte Carlo, MGM or Mandalay because they have kid friendly pools, but since the pools will be closed in December that won't matter. You really can't go wrong with most strip hotels that are centrally located--Treasure Island, Paris (probably my #1 rec for families), Planet Hollywood, Caesars (another great one for families), Monte Carlo, Mirage, Venetian. I'd probably stay away from the city center hotels (Vdarra, Aria), Bellagio and Wynn/Encore. Those are higher end and there aren't as many kid friendly things to do.
I'd also stay away from Circus Circus. Lots of people pick it because of the fact that there's a lot to do for kids but it's a real dump and not in the best location IMO.

Thanks for the info! We are definitely looking at MGM and Mandalay and good to know Paris is a good one, too!

MGM is next to the M&M store! Kids can get a sugar high! I'd recommend MGM or Mandalay, Mandalay is close enough to the arcade/games at Excalibur without staying there. Mandalay also has the shark tank that might intrigue a 3 year old. Paris/Monte Carlo and Treasure Island are good too. Treasure Island has the free volcano show and never seems as busy as other casinos to me.
