ok, I could barely get to my kitchen before I was gnawing my arm off. I had about 1/4 cup of homemade balsamic vinegrette-marinated roasted veggies and 1/8 cup of basil quinoa. OMG it was delicious...
but in all honesty, what is the best thing to eat at night when you're hungry and bedtime is only 1 hour away?
An *eighth* of a cup of quinoa? That's hardly worth your time. You eat seriously tiny portions! Quinoa is good for you. It's an excellent source of protein, great after a workout. If you're hungry, eat a reasonable portion of something satisfying--cereal and milk, cheese and crackers, quinoa and veggies...

I'm guesstimating 1/8 cup quinoa- it was more like 5 Tbsp? Maybe more like 1/4 cup? Either way, glad to know it was a good choice!
Stop guesstimating and start measuring. Food scale, measuring cups, whatever you have. If you want to track what you're eating, you have to know what it is.
I have almonds and dried fruit (unsweetened) handy for after a work out if I'm starving. We don't have a lot of snack foods at my house, so those are really the only things I can grab and eat quickly without having to go through much effort. I don't even like almonds, honestly, I just know they're good for me. So I have like 5 almonds and a few pieces of fruit. Then I sometimes have around a cup of almond milk with some protein powder mixed in. Works for me!
If I don't want a lot on my stomach (because it's late, or I'm going to be eating a meal soon,) but I want to take the hunger edge from a run off, I've been doing rollups. I just half a piece of cheese and roll each one up with a slice of turkey. It's a quick little boost of protein and holds me over without making me too full that I don't want to go to bed or eat dinner.
