Lunch is my biggest meal of the day. I usually take the main dish/protein from dinner and eat it as leftover for lunch, with an additional vegetable (cooked in plenty of fat!) and a fruit.

I like to eat salads for lunch during the summer, but they're big salads with cheese, protein, nuts, avocado, and other high-calorie things in them. For example, my lunch today is southwest themed. You can do baby spinach (or whatever greens you prefer), black beans, corn (I cooked/thawed frozen kernels), tomato, bell pepper, cheddar cheese, and half an avocado. You can also add meat (chicken or steak); sometimes I grill up a bunch of meat for my salads on the weekend. You can easily create a healthy 600-800 calorie salad.
