How about a Dutaillier glider? Let them pick which one, letting them know what styles work with your decor. I think mine was like $700, and it is the best thing EVER.

What about a really nice camera? Like a DSLR or something? It's not really for the baby, but you would use it to take photos/videos of the baby. It's fun and practical!

This is not on you at all. They should want to buy anything that would be helpful/useful to you and the baby. If they want to do something personal, they should probably come up with an idea on their own. Tell them to look on Etsy! Lots of fun stuff there.

Ok, truly, I mean if it were me, I'd very nicely say "This is what we really need/would like: xyz. And whichever of those items is the most 'fun' sounding to you is the one you should choose for us, and we'd be so thrilled."

Thanks for the ideas everyone! I'm actually super glad I posted because I got to vent a bit and I feel like a lot of you understand my side, which I like of course lol. And sorry to the people going through other frustrating experiences! rupertpenny I'm so sorry about your friends and their late shower.
