I'm trying to plan something for next year without the kids. Looking for something quiet, not very touristy, on the beach, preferably an island (but isn't a must). Possibly something other than the usual Mexico, Dom Rep, PR or Belize since we've been there done that. We do want to keep it to N. America, S. America or Caribbean.
So far Little Corn Island is at the top of my list. Not so much my husband.
My top warm vacation destinations for the future are Galapagos, Bali and the Philippines. I've heard incredible things about Costa Rica.
If you're flexible on the island side of things, the Okanagan Valley in British Columbia is beach and wine heaven in the summer time, it's on the edge of the desert so rain is very unlikely.
The Oregon coast is supposed to be stunning, and I've heard a lot of people rave about Cape May on the east coast.

We went to Nicaragua a couple years ago. I wanted to go to the Corn Islands, but we only has a week, and didn't want to spend the extra day to get to the little island. We still might have done it, but read that there's been a rise in burglaries from tourists and the islands, particularly the little island, don't really have a police presence. Instead, we spent some time in Granada, which was really cool for day-tripping (my favorites were the live volcano and the day we spent lounging/swimming/snacking in a beautiful and serene crater lake) and the rest of the time on the Western coast. We found a beach that was always deserted (we were literally the only ones there) and spent an afternoon at a more known surfer beach. Our resort was mostly empty. (We went in November) and completely relaxing, although the food was Americanized and was nothing to write home about.
