We did an excursion with, I think, Powerboat Adventures? Something like that. It was $180 pp and included a powerboat ride out to one of the Exuma Cays, breakfast on a cay, snorkeling for an hour or two, lunch (beer and rum punch included), feeding sharks our leftovers from lunch, and feeding iguanas on another cay. We had a blast and thought it was well worth the money. It was about the only place on the island where the drinks weren't watery lol! Ditto sfgal that the drinks were expensive and watery...we stopped in a liquor store across the street from our apartment to buy a couple bottles of liquor and just stocked up on mixers at the grocery store, which was much more cost-effective than buying drinks in the restaurants.
Beyond that, stop at one of the restaurants in the Fish Fry for some conch--conch salad was our favorite, but it's all delicious!
Never been to Atlantis, when we went to the Bahamas in the spring, we stayed on one of the out islands. There's the Bo Hengy that makes a loop from Nassau to Spanzish Wells to Harbour Island off Eluthera. Might be an option if you want a day trip away from the resort.
