So I have a bunch of zucchini I need to use up. I'm going to make a zucchini bread but I also want to use some for dinners this week. Besides roasting, how do you like zucchini? It could be for a side dish or a main.

Well, I like yellow zucchini so I don't know how different the taste will be... But I always slice it up thin and toss it in the frying pan with some coconut oil, pepper, garlic powder, and sea salt. So good! Jack LOVES it.
I would make extra zucchini bread and freeze it, but I LOOOOVE zucchini bread. Otherwise, it's great in pasta, sautéed in olive oil, grilled. I miss gardening!
I make a lot of things with them. I make a pancake sort of thing with hashbrowns, shredded zucchini, carrots, eggs, and breadcrumbs and William loves them. I make a lot at a time and freeze them, they are great for quick snacks.
I slice it up nice and thick, toss it with olive oil, salt and pepper and then give it a quick grill. Just long enough to get some nice grill marks and start to cook it, but not so long it gets mushy. Owen (surprisingly) likes this!
