I am hosting FIL & MIL and FIL's parents (so H's grandparents) for brunch on Sunday. Help!
I was thinking of doing: breakfast casserole (like sausage & eggs & cheese & hash browns) pastries from local amazing/delicious bakery coffee juice fruit
What do you thinK? I need assistance. Grandma has diabetes so I am trying not to do something like a french toast casserole with maple syrup because I think its too much sugar for her. Also Grandma & grandpa don't eat vegetables or things that are green.
Sounds yummy! Could you get bagels or something with less sugar for the grandparents from the bakery so that they have another option other than the casserole?
As a diabetic, I prefer doing the overnight breakfast casseroles with sourdough bread or grains. I use less bread than the recipe calls for as well. Potatoes are worse for me. Berries and melon (not watermelon) are also better for fruits.
Sausage and Cheese Breakfast Casserole What you'll need: Cooking spray 12 ounces turkey breakfast sausage 2 cups 1% low-fat milk 2 cups egg substitute (or total of 10 eggs) 1 teaspoon dry mustard 3/4 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/4 teaspoon ground red pepper 3 large eggs 9 slices bread (substitute sour dough or wheat, more diabetic friendly) *cut back from 12 slices 1 cup (4 ounces) finely shredded reduced-fat extrasharp cheddar cheese 1/4 teaspoon paprika
What you'll do: Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage to pan; cook 5 minutes or until browned, stirring and breaking sausage to crumble. Remove from heat; cool. In a bowl combine milk and next 6 ingredients (through eggs) in a large bowl, stirring with a whisk. Trim crusts from bread. Cut bread into 1-inch cubes. Add bread cubes, sausage, and cheddar cheese to milk mixture, stirring to combine. Pour bread mixture into a 13 x 9–inch baking or 3-quart casserole dish coated with cooking spray. Make sure to spread the egg mixture evenly in baking dish. Cover and refrigerate 8 hours or overnight. Preheat oven to 350°. Remove casserole from refrigerator; bring to room temperature. Sprinkle casserole evenly with paprika. Bake at 350° for 45 minutes or until set and lightly browned. Let stand 10 minutes.
Thank you pom! that is really helpful to hear from a diabetic. Would strawberries & raspberries & blueberries be OK? maybe I'll grab a container of greek yogurt, too.
I'm going on a limb here, but what about smoked salmon?
I was thinking the same. I don't know if the grandparents would like it, but you could offer bagels and cream cheese together with the salmon so they could make sandwiches.
Any type of breakfast sandwich could go great too. You could offer the ingredients separately and each person could make their own sandwich with the things they prefer.
