I tend to make myself easy lunches, although I eat them at home, but I pack some of the same things for DH
- tuna salad or egg salad on bread or tortilla - roasted chicken (I marinate four breasts and then bake them slowly for about an hour or so and then use them over the week) in sandwiches, wraps or salads - rice (precooked and portioned out) with chicken, beans, or another protein, and something for flavoring - a container of hummus, with cut up veggies for dipping, and then a muffin or something to go with - leftover soup whenever I make soup I make a lot of it so that I have at least 4 servings of leftovers. I put them in individual size containers and heat up as needed.

I am terrible at lunch, we usually have cold cut sandwiches, Lean Pockets, or sometimes leftovers. I love the idea of rice bowls. I'm gonna steal that.

Wraps and leftovers. I took frozen meals quite a bit too. Granola bar, yogurt, and a salty snack. I never really made anything specifically for lunch when I was working.
I try to do this bit in the end I just buy lunch. The most expensive option is $4.50 and drinks are free. I need to get in the routine though as winter is coming and the caf is in a different building. Leftovers are easiest for me.

I got a fancy little container for salad that has a section for protein, a section for crunchy stuff, and one for dressing. It also has an ice pack that I can add on.
I've used it once.
Honestly, for lunch I usually grab a piece of fruit and a bag of pretzels. I teach 10:20-11 at the cc, then have to eat on my drive to my 12:30-3pm classes. I have a squeezy apple sauce on the ride home from the uni at 3.

I usually eat leftovers, but if I'm making something to bring to work it's a salad in a mason jar. Dressing goes on the bottom, then beans and/or cheese, then veggies, then lettuce. Shake it up when you're ready and pour it on a plate.
