I don't get tired of skiing, and that was true when I was a kid too. However, there is no law that says that you have to ski every moment of every day the lifts are open. Take some time to do other stuff or just hang at the hotel.
I don't think that is too much. You can keep the days short and do something else later, right? We usually just go for the day every Saturday, but if we had a cottage in the mountains I'd spend all my weekends and winter holidays there.

The little one doesn't ski yet so we walked around (taking turns) with the sled, played in the snow, etc.. The oldest was in lessons every Saturday morning and then we would do a few extra rides. This year we booked lessons for both, but we will only spend mornings as I can't ski and will get bored.

My family, including the boys, boys skis all weekend, about every other weekend, and they don't get sick of it, as long as they still get free time in the evenings. In fact, the more we ski, the more they wast to.

I feel like you are over thinking this. My kids don't require constant stimulation from me or each other to be happy. Do you plan every second of your trips? There is nothing wrong with hanging out with nothing to do.
I don't think she'll get sick of skiing. You can always take a day or two off here and there if she's tired. Lifts close by 4 or 4:30, and if you go out later in the morning and quit earlier in the afternoon, it's not really that much. I'm sure they have a rec center or you can get passes to use a hotel pool somewhere, too. So much stuff to do outside - sledding, skating (you can learn to skate together - it's not that hard), building snow forts. Etc.
You could even take a trip to Denver for the Children's Museum (I love that Children's Museum!). I know Aspen's not at all near there, but it's a thought if you're skiing somewhere closer to Denver.
