If it's DH requesting either my lasagna or beef stew. For parties people always ask for my spinach dip, deviled eggs or to make (what I like to call) the dreaded Oreo balls.
Orzo salad. It's a family favorite, and it's been a hit at most potlucks I've attended
1 1/2 C. Orzo
1/3 C. Oil packed sun-dried tomatoes ( drained and chopped)
1/4 C. Balsamic Vinegar
1/4 C. Kalamata Olives (seeded and coarsely chopped)
2 cloves garlic (mashed)
5 T. Extra-virgin olive oil
1/2 C. Pinenuts (lightly toasted)
1/2 C. Fresh Basil (chiffinade)
1/2 C. Freshly grated parmesan cheese (coarsely grated)
3 Thin green onions (sliced)
2/3 C. Petite frozen peas (thawed) (optional)
Cook pasta until tender ( approximately 8-9 minutes - do not overcook). Drain thoroughly. While orzo is still warm, transfer to a bowl and add the following: sun-dried tomatoes, vinegar, oil, garlic, green onions and olives.
Toss well to coat and refrigerate at least 6 hours or overnight. Before serving bring to room temperature.
Toss lightly and add remaining ingredients: pinenuts, basil and cheese and serve.
