I eat them, although I am not WW. A large egg is 70 calories and most-if-not-all of the nutrients are in the yolk. If I'm only eating 140 calories in two eggs, it is important to me to cram in as many nutrients as I can for those 140 calories.

I also just eat the whole eggs, but if you pose the question to WC (or whatever WC is called now...), maybe you could get some suggestions for how to best use them. I believe they can be frozen using some technique (google it), and I know they're used in recipes like lemon curd. Maybe freeze and save them, then make a batch of citrus curd and give it all away as gifts??
