Perhaps you had a high class breed of pumpkin? Our trader joes one had plenty of guts and seeds.

I have never done it as an adult, but I too remember all of the "guts" my mom used to have to clean out lol

I think we used to carve, like, 5 pumpkins or something to get a ton of seeds. I can still remember the smell of pumpkin guts and being up to my elbows in pumpkin slime. Ah, memories!

I think it depends on the variety of pumpkin. Some pumpkins are meant to be cooked and have more flesh and less seeds and guts.

We got a large pumpkin this year. There wasn't too much by way of guts but I did get enough seeds to fill a gallon size ziploc bag half way up.

There aren't always a lot of seeds and guts, are you sure it wasn't pie pumpkin?
