Once a week is too often. It's taking away from their natural oils and skin. I bathe mine once every 6 weeks (maybe. She's a short-hair that doesn't play a lot in the dirt). Sounds like you may be bathing yours too much.
He is really active and plays a lot outside. He gets really smelly even if he bathed less frequently.
Johnson and Johnson's baby shampoo. The vet tech who pet sit for us used it, and her fur was incredibly shiny and soft! We very rarely bathe her, but when we do, we use the J&J
Yeah, we only bathe with soap like two or three times a year - they get rinsed with water in the hot months. They stink more the more frequently they get bathed.

I have a weimaraner. She really only gets bathed 4 or 5 times a year, unless she rolls in something. I also use baby shampoo or this other organic oatmeal dog shampoo (can't remember the brand). She is very unsmelly though, and has sensitive skin, so she doesn't need and really can't have baths too often.

Get puppy wipes and use them instead of baths. You can find them at any pet store.
Eta they aren't just for puppies, that's just what we call them

@scottydeux recommended some wipes once that helped with the smell. My dog doesn't get smelly usually, just oily every month or so and that's when he gets bathed. We've used various shampoos and currently have the one that's like Bedhead for dogs.
Eta: A lower quality food sometimes creates a not so pleasant doggy odor. When we adopted our pointer he was eating nasty Iams and he was smelly and his fur was course. We got him eating a good diet and he is like velvet and doesn't smell at all!
And for what it's worth we have never bathed either of our dogs once. We have a 80 lb lab and our 60 lb pointer.
This is what I was going to ask. All our fosters come in stinky from the garbage the get at the track. After a month of grain free they don't smell at all.
We bathe the guys 2 or 3 times a year. Whenever pel starts looking dingy and yellow.
We have cats, but I think this might apply here too. We were talking with our vet one time about using cat wipes on our cats. She said that even though the wipes are marketed for animals, they often have unnecessary chemicals and scents in them. She said just to buy baby wipes that are unscented and for sensitive skin. They are a lot cheaper than the wipes marketed for animals and they work well.
