Oh Jeezus, that casserole is my worst nightmare. THREE cream of craps AND onion soup mix? If you don't die from vomiting, your blood pressure will do you in. Nice knowing you.

If it had cheese and noodles instead of rice I'd be all over it periodically. I can't eat cream of crap soups often because they make me fill like crap.
Cream of crap casseroles are fucking delicious. I'm loling at the hysteria. It's not great, people, but it's not poisonous, either. Just drink an extra glass of water and eat well tomorrow

I make something similar but only use one can of cream of crap. I season and brown chicken, pour cream of chicken with a little milk all over of it and bake it. Serve it on top of rice with a side of veggies. My kids love it
Yeah, might as well add some more sodium laden canned veggies, sounds like more sodium is just what was needed.
It's just salt. With the exception of people with certain health problems, one heavy sodium meal won't cause major (I define major as causing life altering or life threatening) problems. I don't quite see the concern.

I have the same issue with severely low blood sodium, but I still couldn't get myself to eat that, lol.
Years ago my MIL was making DH his "favorite" - a frittata with eggs, fried potatoes, fried hot dogs, and cheese. I let her know that I'd join them for dinner, but will bring a salad for me (and hopefully them) to eat, lol. She didn't mind, she knows me. I also let DH know that I wouldn't be cooking that for him. Now whenever I go out of town or something she'll make it for him.
Lol I don't know if I could either. I grew up in the South, so casseroles with cream of crap are relatively standard fare (we didn't eat them at home, though) and even I think that she went overboard.
That said, the meal in itself is not dangerous, and if she didn't serve fresh vegetables, so be it. It's one meal.
Eta: if you have low sodium, shouldn't you be trying to get more? We didn't realize quite how many issues I had until I started cooking at home and eating an obsessively "healthy" diet. I still don't get enough sodium, but I make sure to get at least 2,000 mg a day. I probably need closer to 5, but that isn't going to happen.
