DH is pulling turkey and root vegetable stew out of the oven. After two intense workouts today, I am ready to eat the entire pot. I hope it's as good as it smells.
I made a giant egg bake and threw in everything I was craving - spinach, tomatoes, sauteed onion and green peppers, a couple of pieces of crisp bacon and a bunch of cheeses. It was worth the hour it took to bake.
This is my first time making it and it's dairy free so I can't make any promises
1 cup milk (rice, soy, almond) 3/4 c water 2 c chicken or vegetable broth 1 c coarse ground yellow cornmeal 1/2 bunch basil, stems removed, and finely chopped Salt and pepper
1. Heat a medium sauce pot over med-high heat; add in milk, water, and broth-bring to a simmer 2. Reduce heat to medium low, sprinkle in cornmeal and whisk to avoid clumping. Stir often with a wooden spoon for about 20 minutes or until texture is smooth and no longer grainy. 3. Stir in basil, salt, and pepper; serve warm
I really wish I could add some Parmesan or something to it lol

The polenta was really good. I don't even know that it needed cheese. But then again, everything is always better with cheese lol
