It snowed here today, so we were in the mood for comfort food. We are having meatloaf, mashed potatoes and corn. I used to hate meatloaf when I was little and now I love it.
All this talk about spaghetti squash makes me really want to try one.
It's not great tasting, lol. Just being honest. It's bland and it needs A LOT of help to taste good. At least to me. The best recipe is a broccoli cheese casserole with chicken and replacing the rice with squash. OMG, I absolutely could not tell the difference. I've made it every week since.

It's flurrying outside...first real snowfall of the season. So Crockpot chicken chili sounds awesome. A perfect comfort food to curl up with. Just have to wait for H to get home before I try it.

Recipe please!
Couple crowns of broccoli, a rotisserie chicken, one large spaghetti squah, 1 cup greek yogurt, 3T light mayo, 1 can cream of celery, 2 cups cheese
Cook spaghetti squash (I cut it in half, cook it at about 400 for 40 minutes). Boil broccoli (don't over cook it because it cooks in the oven, too). Mix the greek yogurt, mayo, cream of celery, 1 cup cheese, chicken, broccoli and squash in large bowl. Add salt and pepper as needed. Cook covered at 350 for 30 minutes. Take off foil and add cheese and cook another ten minutes.
It calls for breadcrumbs on top but I don't do that.
This is my first time making it and it's dairy free so I can't make any promises
1 cup milk (rice, soy, almond) 3/4 c water 2 c chicken or vegetable broth 1 c coarse ground yellow cornmeal 1/2 bunch basil, stems removed, and finely chopped Salt and pepper
1. Heat a medium sauce pot over med-high heat; add in milk, water, and broth-bring to a simmer 2. Reduce heat to medium low, sprinkle in cornmeal and whisk to avoid clumping. Stir often with a wooden spoon for about 20 minutes or until texture is smooth and no longer grainy. 3. Stir in basil, salt, and pepper; serve warm

Thank you! I am a dairy whore so I will probably add a little parmesan or pecorino romano.
I had a BLT salad and fancy toast. It was delicious.
Dh sulked and had leftover soup and chicken wings because the tub o' lettuce I bought "has baby spinach, and those bitter purple leaves, and the pieces are too big".
Frozen burrito and grapes. I have been eating like shit since H has been gone. I don't really want the grapes, but I feel like they make the dinner better.
