What are your favorite cheap-ass meals? I'm just looking for ideas to add to my collection. I tend to cook semi-expensive, elaborate meals. Give me all your ideas!
One of my favorite cheap and very filling meals is BBQ chicken baked potatoes. I cook chicken in the crockpot with bbq sauce and then shred it when it's done. Serve on a baked potato with butter, salt, pepper and some cheese.
I tend to buy larger portion/expensive meats and stretch them into 2-3 meals
Example:
Friday, we cooked a 2.5 lb. London broil with salad and rice Saturday, we used leftovers to make cheese steaks with fries Sunday, we used the last of it and cooked it in brown gravy for beef tips and rice with broccoli
One cheap meal I like to do is to buy turkey burgers when they're on special and cook them up Salisbury steak-style with mashed potatoes and peas
One of the cheapest (but one of my favorite) meals we do is these frozen asian dumplings. They go on sale for about $1.99 sometimes and I stock up. I make a couple cups of rice with them and use some peanut satay sauce with it.
