I'm probably getting him 2 pairs of Carhartt pants, a flannel, and a Carhartt sweatshirt because he needs them and won't go shopping. He buys all the tools he could ever need, and then some.
I'm not sure this will help you, but mine is getting a Minion Dave toy and a Vineyard Vines NY Mets belt. I still need to get some stocking stuffers, probably some GCs, lip balm, and socks.
My BIL is an outdoors guy (DH is not). I got BIL thinsulate long johns for working outside and these techie gloves. The gloves allow him to answer the phone without taking his gloves off.

I'm getting him a cast iron griddle thing he asked for, and a dewalt flashlight he also asked for & probably some clothes. Last year I got him a dewalt impact wrench & Costa del Mar sunglasses & clothes.

For my H's bday I got him a Homedics massage chair insert (it was about $100 at Costco). It massages his whole back with heat, etc. good for pampering my outdoorsy guy in a manly way!
DH is a competitive runner, and he really likes the nike+ app but his iPod is getting quite out of date and won't run the app properly anymore. So I'm getting him the sports watch: nikeplus.nike.com/plus/products/sport_watch/
He also desperately needs winter boots. He's been shoveling snow wearing rubber rain boots for several years now
For once I have a few ideas for DH. What I don't get for Christmas I'll save for his birthday in March/ Father's Day. They're all things he's mentioned wanting

Does he have any hobbies? I am getting my DH a new wetsuit for spearfishing and new costa del mar sunglasses as his big gifts then some little stocking stuffers.
Sunglasses can be good, maybe some polarized ones if he fishes?
DH's bday is in early December and I'm getting him a saw stop table saw, which is expensive, so I'm looking to get him something less pricey for Xmas. I'm thinking maybe a nice pen or noise canceling headphones? Not sure yet.

I 2nd this if your DH is into building/woodworking. I got DH one last year and he loves it and also went out and bought more accessories for it, lol!
DH this year is getting a north face fleece, boxers and some stocking stuffers.
Already has one mellymel -- he has like every took imaginable- no joke. He is in construction and has all his own hand tools, big tools, tools you might need "someday".
They've got handles and then sort of little sharp round teeth. They're like little rakes? I found them in a kitchen store. He competes on a barbeque team in the summer, so he wants to be able to shred it hot without burning himself. I can take a peek at the brand once he leaves for work.
It won't help you much but I got H Wicked Good Slippers and a fleece-lined flannel shirt from LL Bean. He's not into clothes either but I know he's wanted both of these for awhile.
No idea why the description is for a hamburger thing, but that's what I got from a local store. They seem like they'll work. There's also the aptly named "Meat Rake" on amazon.

I am getting DH American Chestnut seeds. The American chestnut was wiped out by blight over 100 years ago; they have been working on cross pollinating the trees that remained and using Chinese chestnuts to try to repopulate the species. If you don't have a place to plant the trees you can donate so that they can afford to plant some at the research station. yes, I am a plant geek.
This year I'm getting DH a new scope for his rifle, headphones to wear at the gym, and a new flannel shirt that has the slick lining (he doesn't like the ones that have fleece lining). I also got him a Jelly Belly sampler box for his desk at work.
