We are changing things up this year and plan on doing our nice meal with MIL as brunch. I've never done a brunch though...given that it's just three people, what would you put on the menu? My initial thought was ham and some kind of veggie and egg casserole, but that's not a very complete meal and I don't know what else to serve.
Cheesy potatoes? Or herb roasted potatoes and add cheese to the egg casserole. And I would use red pepper and asparagus or spinach (or both) in the casserole so it's red and green, lol. Then a breakfasty roll like popovers, coffee (with spices like cinnamon and cloves into the grounds, it's delicious and festive), and coffee cake or cinnamon rolls.
We do Christmas brunch every year--it usually involves breakfast casserole ( one egg, one French toast style), fruit plate, cinnamon rolls, coffee, and mimosas. Simple, filling and delicious.

We baked eggs (baked in a muffin tin with either a piece of bacon or sundried tomatoes, and a splash of cream). It is nice because you can make exactly the amount you need.
I make cinnamon rolls the night before, let them rise overnight in the oven, and bake in the morning.
Thanks for the suggestions! Mimosas are a must. I like the idea of cheesy potatoes and a frittata, and maybe some fruit to make it seem healthy. I'd like rolls (maybe croissants?) But for just three of us that might be overkill.

I think you can serve 3 croissants with a frittata. And with only 3 people, doing a frittata is very manageable and special. Making and baking cheesy potatoes ahead of time sounds perfect. As well a some fresh fruit or a small salad to round it out.
Are you still doing low carb.? I feel like an ass for recommending the FT casserole then.
You could also make a granola, yogurt, fruit bowl.
In theory, but I just ate a giant bbq chicken quesadilla on a flour tortilla for lunch. And I had an English muffin for breakfast. On a better day we limit carbs. Not an assy rec by any means though!

I'd like to be able to do stuff ahead of time, but I'm not sure how long we will be at my dads on Christmas eve.
My family loves Smitten Kitchen's spinach and cheese casserole - I double up on the spinach though. I also serve bacon, sausage, mimosas, fruit salad, and home fries. I might skip the home fries this year, though, and just have a bread/muffin/biscuit basket out. You can do the spinach and cheese casserole ahead of time (and should) as well as slicing fruit.
Monkey Bread or a FT casserole are my go go's. I did quiche one year but I won't repeat it….Yogurt parfaits and assorted breads are always a hit with kids as are waffle bars?
